Cougar Gold Cheese—WSU’s world-famous cheese served with assorted crackers. $45, serves 15 – 20

Garden vegetable tray—a colorful array of crisp vegetables served with ranch dressing. $2.50/serving (minimum 10 servings)

Nacho fiesta—build your own nachos from tortilla chips, cheese sauce, salsa, sour cream, olives, jalapeños and green onions. $3.50/serving (20-person minimum)

Vegetarian spring rolls—served with sweet chili sauce. $16/dozen (2 dozen minimum)

Turkey pinwheels—roasted turkey, cheddar, red peppers, lettuce and sun-dried tomato pesto cream cheese in a flour tortilla and sliced into pinwheels. $16/dozen (2 dozen minimum)

Pasta buffets

All pasta lunch buffets are served with Caesar salad and garlic bread. (10-person minimum)

Italian vegetable and chicken pasta—roasted chicken, artichokes, tomatoes, onions, bell peppers, zucchini, garlic and olives tossed with penne pasta in a light basil-cream pesto sauce. $9.50/person

Smoked salmon penne pasta—smoked salmon, fresh spinach, tomatoes, basil and penne pasta tossed in a rich cream sauce. $11.75/person

Spaghetti and meatballs—marinara sauce and beef meatballs served with spaghetti pasta. $9.25/person

Plated salad entrees

All salad entrees are served with a fresh baked roll.

Cobb salad—mixed greens topped with chicken, tomatoes, olives, hard-boiled egg, cheddar cheese, bacon and onions; served with blue cheese dressing. $9.75/person

Asian chicken salad—sesame-marinated chicken, bell peppers, green onions, carrots, broccoli and mixed greens sprinkled with sesame seeds and crispy rice noodles; served with orange-soy dressing. $9.75/person

Greek chicken salad—tomatoes, cucumbers, onions, olives and feta cheese tossed in herb vinaigrette and topped with sliced chicken; served on a bed of shredded romaine lettuce. $9.75/person

Chicken Caesar salad—herb-marinated roasted chicken on a bed of romaine, parmesan cheese and croutons tossed with Caesar dressing. $9.75/person

Blackened salmon Caesar salad—Cajun-spiced fresh salmon fillet on a bed of romaine, parmesan and croutons tossed with Caesar dressing. $12.25/person

Sandwich box lunches

Up to three selections of box lunches may be ordered per event. All box lunches include sandwich, bag of chips, apple and canned soda or bottled water.

Box lunch add-ons—pasta salad, $1.50 each; chocolate chip cookie, $1 each

Chicken Caesar wrap—herb-marinated roasted chicken with Caesar dressing, shredded parmesan and romaine in a flour tortilla. $8.50/person

Veggie wrap—broccoli, cauliflower, carrots, spinach, olives, sun-dried tomatoes, feta and parmesan cheese wrapped in a tortilla with pesto cream cheese. $8/person

Turkey with cranberry mayonnaise—sliced turkey, cheddar, romaine and cranberry mayonnaise on sourdough bread. $8.75/person

Roast beef on a kaiser roll—thinly sliced roast beef, horseradish mayonnaise, cheddar and romaine on a kaiser roll. $8.75/person

Deli ham on marbled rye—sliced ham, Swiss cheese and crispy romaine on marbled rye bread with Dijon mayonnaise. $8.75/person

Honey-mustard ham or turkey—your choice of sliced ham or turkey, Swiss cheese, honey-mustard dressing and romaine on a honey-molasses baguette roll. $8.25/person

Tuna salad croissant—tuna salad with celery, onion, pickle relish and romaine leaves on a buttery croissant. $8.25/person

Linen and china selections

All food and beverage service tables are clothed with white tablecloths at no charge; and unless requested, all orders are served with paper and plastic ware.
